Cooking is something I enjoy doing, and most of the things that come out of our small kitchen are pretty good. There have been a few - maybe more than a few - things that were served, tried and not finished. But over all I'd like to think myself capable of preparing a yummy meal.
When we got married one of my showers everyone brought a dish and a recipe to go w/ it. I tried a lot of those new dishes during our first year of marriage. One of those recipes I still use on the regular and have almost gotten it down by heart. It came w/ the great piece of hand made pottery and a recipe for Chicken Pot Pie.
This is the easiest dish ever! Many thanks to a dear family friend, Melissa Little, for sharing this w/ me. I think of her every time I make this dish.
Chicken Pot Pie
2 refrigerated pie crust - follow directions on box for a 2 crust pie
Mix together -
2 cups cooked cubed chicken - I like to use a rotisserie chicken already cooked and seasoned I pull meat off the bone and shred
2 cans cream of potato soup
1 16oz package of frozen veggies, your choice - I use mixed veggies
1/2 cup evaporated milk - if I don't have any I just use regular milk
1/2 tsp thyme
1/4 tsp pepper
Pour into prepared pie crust. Cover w/ other crust. Pinch edges together and seal. Cut slits in top center Back @ 375 for 45 - 50min or until crust looks golden brown on top, and juices are bubbling up through slits - Yummy!
