For Dinner

I'm going to go ahead and just confess I love a casserole dish. I love how easy they are to make - you just throw everything in a pan and pop in the oven. I mean, whats not to love?

Mark was away a few weeks ago, and stayed with some friends we knew in the city who now live in Va.The wife of our friends gave Mark a recipe for this veggie dish she made that the girls might like. I've been wanting to try it out - the directions were super easy! - and last night I got a chance to. Unfortunately I don't follow directions very well, I like to add things, and not use some ingredients, to add my own flare to it I guess. I did that to this as well. . . So, here is the recipe for Veg-All Casserole:

3 cans mixed veggies (I used a package of mixed frozen veggies)
1/2 cup mayo
1 med Onion chopped (I didn't use one this time, but I would probably saute' them for next time)
8oz Mozzarella
1 box cheez its ( I used 1 1/2 sleeves of ritz because that's what I had)
1 stick of butter
*(I added chicken breast as well)*
drain veggies, mix w/ onions, mayo, and cheese, put in baking dish. Mash cheezits up fine, melt butter and mix w/ crackers, put on casserole. Bake at 350 for 30 min 

So what about you, whats your cooking style? Your go to dish if you don't plan out every meal, or your throw together dish? I'd love to hear! Some of my favorites are chicken pot pie, boring baked chicken w/ rice - we eat a lot of chicken : )
