I'm from the south, south eastern North Carolina to be exact. We do BBQ with a vinegar base and yummy bold spices blended in. We do Sweet tea - well, I don't, but the norm is very sweet and very cold. We do fried chicken. Of course there are biscuits too, which leads me to the topic of this post.
There is an ongoing debate with my wonderful husband and I about my biscuit making ability. Unfortunately I am a hit or miss biscuit baker and the last few times have been big misses. Last week I made them for a meal, only to take them away from the girls - which is like taking food from a starving animals - because there was something very wrong with them. I'm still not sure what I did, or didn't do, with that batch.
So tonight, after my pilates class I decided to whip up a batch. Isn't that normal? I called my mother to have a little pep talk and to make sure my recipe was correct. I measured, mixed, and pinched, then formed the dough into semi round blobs. Popped them into the oven and what I pulled out was not only lightly brown, but perfectly cooked fluffy biscuits. I did it! Finally. And just incase you wanted it I've listed the recipe below.

Easy Biscuits
2 cups flour
2tsp baking powder
1tbs sugar
1tsp salt
3/4 shortening
1cup buttermilk
Combine dry ingredients in large bowl, cut in shortening until shortening is the size of a pea.
Add buttermilk, stirring with fork until dry ingredients is moistened.
Dough will be sticky.
Turn out on floured surface and knead lightly. Roll to 3/4 inch thick and cut, or pinch off.
Bake at 450 10-12 min or until golden brown.
